FOOD AT THE GARRISON INSTITUTE

The Garrison Institute serves primarily vegetarian meals through their in-house caterer. As much as possible, they select local and organic foods that provide a well rounded and nutritious meal. Many who enjoy nutritious, fresh vegetarian food rave about the meals at Garrison.
The Focusing Institute pays extra so that two meals during the week will have a substantial portion of meat, to make at least a partial accommodation to those who need meat in their diet. We have been happy to add this expense so that meat-eaters have two meals with reasonably substantial portions, but those who need meat at each meal will need to find other ways to supplement. The Garrison Institute does make an effort to make their vegetarian meals protein-rich.
Breakfast is the same each morning and includes hot oatmeal as the one heated dish. Lunch and dinner each have a main entree, two side dishes and salad greens. Each dish on the buffet table has a card which lists all ingredients in that dish. Many meals do contain dairy, wheat and/or gluten.
Menus are based on what is in season and on the market. They are a retreat center which is set up to provide meals to groups, not to individuals. Because of this, they are not able to accommodate individual needs. But, because there are many people with food restrictions they do try to offer a simple substitute during lunch and dinner meals. This substitute always includes rice, a plain, unseasoned steamed vegetable and hard boiled eggs. These extra items will be in the small kitchen just behind the Dining Hall.
The Garrison Institute invites you to bring what you think you will need to supplement your diet. They have a refrigerator and shelf space to store what you bring. They also have a microwave and toaster to heat food. They do not have a stove or blender. Even on a limited diet most people find they can eat some of what is offered on the buffet table and, supplemented with what they bring, do fine. So at lunch and dinner you can go through the buffet line taking whatever suits you and then go into the nearby kitchen to supplement your meal with rice, a vegetable, eggs, or other foods that you have brought. Garrison invites you to identify yourself the first night at dinner so you can be shown where extra foods are available. At the end of meals (when everyone has been served) you can go back through the line and take more of whatever agrees with you to add to the next meal.
